Spinach Tofu Masala is a great side dish for breads like Naan, Chapati and Parathas. It also goes well with Daal Rice. It can be used as a filling for samosas and pies. Please click here for recipe for Spinach Tofu Pie.
Spinach (chopped) - 2 handful
Tofu (chopped) - 1/4 Cup
Onions(chopped) - 1/2 Cup
Cumin Seed - 1 Tsp
Red Chilly Powder - 1/2 Tsp
Turmeric Powder - 1/2 Tsp
Salt - to taste
Oil - 2 Tsp
(Please note: You can use the ingredients as much as you wish or as less as you wish as per your taste)
Heat oil in a pan.
Add cumin seeds. Once it crackles, add chopping onions.
Once onions turn pink, add chilly powder and turmeric powder. Mix well.
Add spinach immediately and mix.
Once the spinach wilts, add salt
Mix and cook on low flame with covered lid for 5mins. Allow it to cool to room temperature.
